Ingredients:
Per 4 servings:
1 lb Linguine
7 oz swordfish
7 oz cherry tomatoes
2 cloves of garlic
1 tablespoon parsley, chopped
1 pinch chili pepper
3 ½ tablespoons extra virgin olive oil
salt
Preparation:
After cleaning the fish, roughly chop.
Add oil to a saute or frying a pan and place over medium heat. As soon as the oil is hot, add peeled garlic and once it starts to turn golden, add the swordfish. Stir for a couple of minutes, then add tomatoes, washed and quartered. Also add the parsley and chili pepper, and cook for another 2 minutes. Add salt to taste, stir and remove from the heat.
In the meantime, cook the pasta in a large pot of boiling salted water. Check the cooking time on the box and once that time has past, drain the pasta. Toss with the previously prepared sauce and serve immediately.
